You can hide your taskbar using Windows 11 settings, but that won't hide it completely. The only way to do that is to use a third-party application.

Check the option labeled Automatically hide the taskbar. This will hide your Windows taskbar with one exception: It will show up if you move your mouse to the bottom of the screen.
